An exciting new Champagne brand is definitely cause for celebration! This famous Estate in the village of Ay has been recently taken over by Bollinger. If Bollinger is the elegant, full-bodied, Pinot Noir dominated Champagne of the rich and famous like James Bond, then Ayala must surely be the young, stylish, Prada draped modern expression. Ayala specializes with clean, crisp Chardonnay bubbly and a gorgeous pink and stylish Rosé. In addition they are releasing for the first time in 2006 their ‘Brut Zero’ – a tight and classy, very dry, “weightless” flavour sensation.
